Ingredients
2 cups broccoli florets
1 cup cauliflower florets
1/2 package Fresh Thyme yellow corn tortilla chips
2 cups loosely packed fresh baby spinach leaves
2 bell peppers - seeded and chopped
1/2 cup Fresh Thyme canned black beans - drained and rinsed
1 (16-oz.) container Fresh Thyme mild salsa
1 avocado - pitted, peeled and diced
2 cups Fresh Thyme shredded 4-cheese Mexican blend
1/2 cup light sour cream
Fresh cilantro, chopped
Directions
  1. Preheat oven to 425°F.
  2. Place broccoli and cauliflower in a microwave-safe bowl and cover with plastic wrap.
  3. Microwave on high (100% power) for 4 minutes or until vegetables are tender.
  4. Spread 3 cups chips in a single layer on an overproof platter.
  5. Evenly layer with 1 cup broccoli, 1/2 cup cauliflower, 1 cup spinach, 1 chopped baby bell pepper, 1/4 cup beans, 1/4 cup salsa, half of the avocado, and 1 cup cheese.
  6. Repeat layers.
  7. Bake for 10 minutes or until the cheese melts and browns on top.
  8. Serve with remaining salsa and the sour cream.
  9. Sprinkle with cilantro.
